Callaloo Soup
(Serves 6 to 8)

1 lb. Spinach leaves, chopped
12 small okra
4 ounces, cubed lean ham
4 ounces shrimps
1/2 lb. Crab meat
3 sprigs fresh parsley chopped
1 stalk celery with leaves shopped
4 scallions chopped using white and green parts
1/4 tsp. dried thyme
freshly ground black pepper (to taste)
6 cups water.

Put all ingredients into a pot, cover and simmer for one hour.
